The folks at Apetina are currently challenging you to come up with a salad recipe this summer using one of their range of cheeses. So far there has been a classic salad with a twist challenge, and now it is the turn of the “Snazzy Showpiece Salads”.
I was inspired by the classic prawn cocktail, served in a martini glass and complete with pink Marie Rose sauce. I swapped out the prawns and used cubed Apetina cheese in their place, making this showy salad suitable for vegetarians.
If you are making this for large numbers of people I would serve the Apetina and Marie Rose Sauce mix in avocado halves arranged on a pretty serving plate covered in a bed of shredded iceberg lettuce (you will need 1 avocado between 2 people). To stop the avocado turning black simply squeeze some lemon juice over it.
Recipe: Apetina No Prawn Cocktail
Serves 4 as a starter
Ingredients
1/4 Iceberg lettuce
Handful rocket leaves
1 large tomato
1 ripe avocado
2 tbs mayonnaise
1 tbs tomato ketchup
1 packet Apetina with garlic and stuffed olives
4 wedges lemon or line
Salt and pepper to tasteWith a sharp knife finely shred the lettuce and rocket leaves (reserve a few to garnish). Arrange at the bottom of 4 cocktail glasses.
Finely dice the tomato and avocado and scatter on top of the lettuce.
Swirl the mayonnaise and ketchup together. Season with pepper and salt.
Drain the oil from the Apetina, slice the garlic and olives, stir into the mayonnaise and ketchup mixture.
Divide between the 4 glasses.
Top each Apetina cocktail with a rocket leaf and garnish with a slice of lemon or lime.
Serve immediately.
